Am I the only one who really looks forward to breakfast in the morning?
There’s nothing like a yummy, satisfying breakfast to get you ready for the day!
I’m not proud to admit but years ago, especially when I was in college, I wasn’t too serious about breakfast in the morning. I basically just grabbed whatever was available like a piece of toast or a banana because I had to quickly rush out the door. But then during the day, I felt tired and I often had cravings. If you’re a college student reading this, maybe you can relate!
Lately, I’ve realized that when I take the time to actually make myself a nice fulfilling meal, I feel so much better right then and there. I also have more energy, my mood feels more stable and my day just goes better overall.
So here is a list of my favourite breakfast recipes that I love to make. I’m not trying to stress myself out trying to figure out what to make every morning so these are simple, easy to follow and with just a few ingredients. Feel free to adjust them to your liking. I’m also trying to eat healthier so most of these recipes include nutritious ingredients to fuel my body so I can feel good throughout the day.

1. Banana Oat Pancakes
This has become a breakfast staple in our household.
I’m always SO excited to make these in the morning because they’re so freaking delicious!!
I now prefer these pancakes to regular pancakes tbh because the dairy in the normal ones doesn’t always sit well with me so this is a much better option for me. I also like to add a bit of oat milk to make it easier to blend). After having a plate of these with some fruits, I always feel so full and satisfied thanks to the high fibre content which means no unnecessary cravings during the day! I strongly encourage you to try this recipe!

2. Avocado Toast
Avocado, one of my favourite fruits!
This is one of my top 3 things I love to eat in the morning.
Avocados have been a go-to in my diet since I was a kid so I’m always down to have some anytime really. It’s quick, easy and very nutritious. I also like to use multi-grain bread when I make mine.

3. Peanut Butter Toast (with Banana)
Simple but highly effective!
This is perfect for those days when you’re in a rush and need to quickly leave the house but you still want to grab something delicious and healthy to keep you until lunch.
I actually prefer to eat my peanut butter toast separate from the banana but I know there are people who are into the whole combo so yeah… to each their own!
(I personally omit the extra sugar step from this recipe due to my sensitive stomach.)

4. Strawberry Banana Smoothie
I was never a big smoothie fan but one random day I decided to make one for myself for breakfast and I haven’t looked back since! I even got my whole family onboard too!
Smoothies are refreshing, delicious, nourishing, easy to make and did I mention delicious??
I sometimes like to add some oatmeal or flaxseed meal to mine (I discovered this recently). This helps a lot with my digestion later in the day as well.

5. Veggie Omelette
You can never go wrong with a good omelette.
This is another favourite meal of mine to make especially on my rest days for some reason. There’s just something about chopping the veggies and assembling everything that feels so cozy and relaxing to me. All I have to do next is sit down with my omelette in front of my favourite show!
Anyway, my point is omelettes are great. Try them if you don’t already

6. Healthy Breakfast Sandwich with Egg and Avocado
Another ideal breakfast for busy mornings. If you don’t have time to sit down and eat, combine your fav ingredients in a sandwich and take it to go!
As I mentioned earlier, I looove avocadoes so I’m a huge fan of this recipe.

7. West African Donuts (Puff Puff)
Okay so this one is not healthy per se but it’s an absolute favourite of mine so I had to include it in the list.
Coming from a West African background, we have our own version of doughnuts that we like to have for breakfast, usually with some tea or coffee. This is one of the highlights of my childhood and one of my fav comfort foods. I like to make a batch of those during the weekend and reheat them during the week.
